FILIGREE PERSPECTIVE

Expertise

Expert craftsmen Stéphane Derenoncourt and Guillaume Pouthier
form a complementary duo on the estate, working together with
the same passion devoted to enhancing the vineyard and giving
Carmes its unique signature.

Watching over the vines

This renewal began with the land: missing elements were replanted, slopes were corrected, and the mix of grape varieties was updated to bring back Cabernet Franc. Vine cultivation is guided by an environmentally friendly approach: horses are used for ploughing. Nature is not constrained here, it is revealed.

Fruitful work

In seeking to allow the terroir its best possible expression, plot-by-plot work paired with reduced yields enables concentration in the grapes. The ripe fruit then enjoys a wealth of benefits: harvesting by hand, whole berry fermentation, and slow infusion in a gravity-fed vat. From extraction to barrel maturation, gentleness is the watchword.
